UGH! It all started last week with Cydney and Skylar. Stuffy noses, achy bodies and pounding heads. A few days later, Abi awoke with her throat on fire. Strep. This morning? Abi now has the stuffy/runny nose, pounding head while Cydney, Skylar and I all have the firey throat/achy body/pounding head thing going on. Perfect day for homemade soup.
SANDRA’S CHICKEN VEGGIE SOUP
In a skillet saute 2 lbs chicken tenders, 1 white onion and 1 large clove garlic. Set aside.
In a heavy stockpot add 4 strips of thick Bacon chopped, cook til brown. Add 1TBLSP each, fresh Rosemary, Parsley and Thyme. Stir well. Dice and add: 2 Russet Potatoes, 2 Sweet Potatoes, 3 stalks of Celery and 4 Carrots. Add the chicken, onion and garlic along with the drippings from the skillet. Stir well and add 2 quarts Homemade Chicken Stock. Simmer for about 35 minutes, stirring occasionally. 10 minutes before serving bring to a boil and add 2 cups of frozen Peas, immediately reduce heat. Simmer until peas are heated through. Serve and Enjoy.
